Have you ever had bajan cassava pone? If not, then you’re in for a treat. Try this delicious recipe direct from the Caribbean island of Barbados.

Ingredients

  • 2 cups grated cassava (yucca root)
  • 1 cup grated coconut
  • 3/4 cup brown sugar
  • 3/4 cup of unsalted butter
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ½ cup raisins

Method

Step 1

Preheat oven to 350 degrees F. Grease a 9 x 13 inch pan/dish. Gather large bowl.

Step 2

Mix sugar and butter together.

Step 3

Stir in cassava and mix well.

Step 4

Add coconut to the mixture.

Step 5

Stir in raisins, cinnamon and extract.

Step 6

Pour mixture into the greased baking pan/dish and bake for 1 hour or until golden brown.

Step 7

Sprinkle some sugar water on the top to get it golden brown (optional).

Step 8

Let cool for 10 minutes, then cut into squares for serving.
