Try my bajan bakes recipe, reminds me of how my Mom used to do them back in Barbados 🙂

  • 2 cups all purpose flour
  • 2 ½ teaspoons baking powder
  • ½ cup sugar
  • ½ teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons unsalted butter, softened
  • ¾ cup warm water
  • Oil for frying

Step 1

In large bowl mix together flour, baking powder, sugar, cinnamon, nutmeg and salt.

Step 2

Add butter and work it into the mixture. Slowly add water in a stream, stirring with wooden spoon until the flour starts to leave the sides of the bowl.

Step 3

Transfer dough to a lightly floured surface. Knead the dough and roll out to cut out circles or roll into balls.

Step 4

Place the balls/circles into the frying pan or deep fryer and fry until golden brown. Serve while hot.

Step 5

Enjoy your bakes! You can also serve with grapes and fried egg!
