Here’s my version of cherry pie, it’s sweet and very delicious.
2 unbaked 9 inch pie shells
4 tablespoons quick-cooking tapioca
1/8 teaspoon salt
1 cup granulated sugar
4 cups fresh pitted cherries
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 tablespoons butter

Preheat oven to 400 degrees F. Gather large bowl.
In the large bowl combine tapioca, salt, sugar, cherries, and extracts.
Let stand for 15 minutes.
Place pie filling mixture into the pie crust.
Cover with top crust, dot pastry with butter and press the edges together with your index finger. Take a fork and cut vents in the middle top of the crust. You may want to place pie on foil lined cookie sheet in case of drips. Bake for 50 minutes or until golden brown.
Let cool for 20 minutes before serving. Enjoy!
